Embracing Winter with Hot Cacao

 

Are you a winter lover or…not so much?  I must admit, it’s never been my favorite season.  I’m not a big fan of funky weather, being cold or layering clothes.  But the seasons are a part of our beautiful, natural world and I think it’s important to find ways to embrace parts of each one.

This winter, I find myself in Portland, experiencing much more of a winter than I’ve had in years (considering I spent the last three in Florida).  I’ve had to get creative to find comfort in my life that replaces the warm sunshine I had gotten used to.  It’s been more of a challenge than I expected, but now deep into February, I’ve found my groove and am making sure I stay on top of the things that make me feel good.

For me, this means keeping very busy with creative projects (thank goodness for our spring course recipe development), deepening my yoga practice, reading under a blanket & enjoying warm cozy beverages, like this Hot Cacao.

If you have a tough time finding things about winter to fall in love with (like me), I’m hoping this recipe will help you experience a little cold weather bliss and find comfort in knowing that Spring is just around the corner.

Hot Cacao
serves 2

This is just as yummy as your traditional hot cocoa, but made with pure, natural, superfood ingredients!

  • 1 cup water
  • 1/4 cup raw macadamia nuts or cashews
  • 1/4 cup raw cacao powder
  • 3 tablespoons coconut nectar or raw honey
  • 2 tablespoons raw cacao butter or coconut oil
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 2 cups hot (but drinkable) water—you don’t want to overheat your yummy raw ingredients.

Place the 1 cup water, nuts, cacao powder, sweetener, butter, vanilla and salt in a high speed blender.  Blend until very smooth.  Divide evenly between two large mugs. Fill each mug with 1 cup of hot water and stir well.  Serve immediately.

    Wow, even though it’s Summer where I am… this looks amazing – I am so going to give this recipe a go!

  2. I have the same feelings about winter and often get seasonal depression during the last couple of months of cold weather. To keep me in summer spirits I’ve been juicing everyday and going on long runs when the weather is nice outside and I can feel the sunshine on my face. This recipe looks amazing and is definitely something I’ll be trying soon!

    Love this! I don’t usually like my “hot” beverages too hot. Just simply warm so I don’t burn my tongue. The mug in the pic is absolutly adorable. I’ll have to sub this for tea one morning this week. :)
